- 1lb (16 ounce) bag of Unroasted (Green) Guatemalan Cubulco coffee beans (Especially hand selected from latest harvest).
- Signature notes of milk chocolate, citrus and hazelnut.
Processing – Coffee cherries are carefully picked by hand, de-pulped, and fermented naturally. They are washed and sun-dried on concrete patios and over plastic film. After reaching a moisture level between 10.5 and 11.5 percent, the parchment coffee is stored. Before we export, the coffee is milled, screened, classified by weight/density, sorted by color and after resting packed in our high quality packaging to preserve freshness and a good quality product every time.
Geography – The region of Cubulco is located near the Sierra de las Minas and Sierra de Chuacus mountain ranges in central Guatemala, Cubulco. This environment is ideal for Coffee. It provides moist clay soil and a rainy, temperate-to-cold climate allowing the cherries to mature slowly and develop our coffee’s signature notes. Cubulco’s coffee producers are smallholders who practice traditional agricultural techniques and operate their own wet mills. Coffee production is relatively new in Cubulco and the quality is very high. We selected this region because of its delivery of a high-quality cup profile, proactive community of producers, perfect weather, virgin soil and an amazing variety of microclimate conditions.
